Aux Trois Fréres De Verniotte

Verniotte is our flagship wine, created in 2008, its inception coincided with the purchase of our new vineyards. Our philosophy with this wine is quite simple, to make the most concentrated, textured and fruit forward wine of the vintage.

The difference between this and the Aux Trois Freres is a
question of longevity and tannin structure. We build this with a combination of a weeks cold maceration pre-ferment in our temperature controlled stainless steel tanks, and then a long and controlled fermentation using pigeage and pumping-over depending on the level of extraction.

We like to perform post ferment macerations to bind tannins and develop the structure. We are lucky in the fact that we have a lot of old vines which are well suited to this process. The blend changes slightly each year but is usually 75% Merlot 25% Cabernet Franc. The Cabernet Franc is very important for us as it gives real finesse and more fruit precision on the palate, aiding development in the bottle. We use 50% new French oak and 50% 1 and 2 yr old barrels to enhance the wines overall complexity adding another layer of flavour. We usually bottle after about 12 – 18 months in barrel and then leave a further 6 months in bottle before release.
